The family-run Domaine Michot has been crafting wines since 1890 and is ideally located in the heart of the Pouilly-Fumé appellation, in Saint-Andelain. Marielle, representing the fifth generation of winemakers, joined the estate in 2007 and officially took over in 2014. Dedicated to her craft, she emphasizes the core values of the estate: sharing, transparency, and sustainability. The winery is equipped with climate-controlled facilities, thermoregulated tanks, and systems designed to minimize water consumption. From harvest to bottling, they operate independently, carefully overseeing every step of the production process to refine each of their cuvées.

Winemaking
Cold settling of the must for 5 to 7 days at 5°C. Racking. Alcoholic fermentation with temperature control (16°–20°C). Racking. Aged on fine lees for 9 months. Filtered before bottling.
