My grandfather Paul was a farmer, passionate about his plots of vines above all his other crops. His love for wine is now rooted in me. This bottle is a tribute to his hardworking life, taking care of his land and family. Ben, proud grandson of Paul.
Vineyard
The vines, now 20 years old, thrive on a diverse terrain of alluvial gravels and limestone. This area, nestled along the Mediterranean coast and extending to the higher grounds of the Aude region, is characterized by its clay-laden and sandy soils.
Winemaking
The grapes are picked in the early hours of the morning, a practice aimed at preventing oxidation and reducing the reliance on sulphites. Once harvested, they are immediately pressed, setting the stage for the winemaking process.
Tasting notes
This wine boasts a pleasing texture, with an initial burst of exceptionally ripe and flavorful fruit. It presents a soft and well-balanced profile on the palate, finishing with a smooth wash of ripe citrus fruit.
Food pairing
Perfect with creamy white fish, salmon, chicken in cream sauce, clam chowder, and aged cheeses. This Chardonnay also goes well with lobster bisque and creamy pastas.
