history
Guillaume and Marion represent the sixth generation of winemakers who cultivate their vineyard with great care and love. With passion and precision, they craft exquisite wines that reflect their deep devotion to their craft. Spanning 272 acres, their vineyard is situated on ideally south-facing clay-limestone soils, overlooking the Thau lagoon. It lies at the heart of the 'Picpoul de Pinet' Appellation.
Vineyard
Density of 4,000 vines/hectare (approximately 1,619 vines/acre), pruned short in either the Cordon de Royat or goblet style, 60 hectoliters/hectare yield (approximately 24.5 hectoliters/acre). Red marl-limestone gravel.
Winemaking
Destemming: Removing grape stems.​ Crushing: Breaking grape skins.​ Controlled Fermentation: Temperature maintained at 78 to 82°F.​ Maceration Time: 15 to 20 days.​ Pneumatic Pressing: Extracting juice and wine.​ Malolactic Fermentation: In tanks.​ Blending: Post-vinification.
Tasting notes
Beautiful red color. Intense nose with aromas of red fruits and licorice. Elegant palate with a lovely creaminess, featuring notes of blackcurrant and a slightly licorice finish.

It will delicately enhance grilled meats, stews, and cheese platters.​
